  • 2 lbs stew beef
  • 0.5 cup peanut butter
  • 1 unit red bell pepper chopped
  • 2 tbsp tomato paste
  • 1 unit onion chopped
  • 1 tbsp beef bouillon powder
  • 1 tsp cayenne pepper
  • 0.25 cup olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup water
  • 2 cups beef stock or broth

Instructions
 

  • Wash the beef and cut it into smaller pieces.
  • In a large pan over medium heat, add olive oil.
  • Add the beef, black pepper, and a pinch of salt. Sauté for 8-10 minutes until browned.
  • Chop the onions and red bell pepper.
  • Add the onions and red bell pepper to the pan and sauté for 3 minutes.
  • Stir in the tomato paste and cook for about 5 minutes.
  • Pour in water, stock, beef bouillon powder, cayenne pepper, and salt to taste. Bring to a boil and cook for an additional 5 minutes.
  • Add the peanut butter and stir until dissolved.
  • Let the stew cook until it thickens, approximately 2-5 minutes.

Notes

For a thicker stew, you can add more peanut butter or simmer for a bit longer.
