Instructions
Wash the beef and cut it into smaller pieces.
In a large pan over medium heat, add olive oil.
Add the beef, black pepper, and a pinch of salt. Sauté for 8-10 minutes until browned.
Chop the onions and red bell pepper.
Add the onions and red bell pepper to the pan and sauté for 3 minutes.
Stir in the tomato paste and cook for about 5 minutes.
Pour in water, stock, beef bouillon powder, cayenne pepper, and salt to taste. Bring to a boil and cook for an additional 5 minutes.
Add the peanut butter and stir until dissolved.
Let the stew cook until it thickens, approximately 2-5 minutes.
Notes
For a thicker stew, you can add more peanut butter or simmer for a bit longer.
