  • 1 cup Panko bread crumbs
  • 2 large eggs
  • 0.75 cup Panko bread crumbs
  • 0.25 cup grated Parmesan cheese
  • 1 tablespoon grated Parmesan cheese
  • 0.5 teaspoon Italian seasoning
  • 0.75 teaspoon salt
  • 0.25 teaspoon paprika
  • 0.25 teaspoon black pepper
  • 0.25 cup tomato sauce
  • 0.5 cup shredded mozzarella cheese

Instructions
 

  • Preheat the air fryer to 400°F (200°C).
  • Butterfly the chicken breast by cutting it in the middle to create two thinner pieces. Pat them dry with a paper towel.
  • In a large shallow dish, whisk the eggs until well combined.
  • In another large shallow dish, mix the Panko bread crumbs, 1/4 cup of Parmesan, Italian seasoning, salt, paprika, and black pepper.
  • Coat the chicken pieces in the egg mixture, allowing any excess to drip off.
  • Next, coat the chicken in the Panko mixture, pressing firmly to ensure the crumbs adhere well.
  • Spray the air fryer basket with non-aerosol oil spray. Spray both sides of the chicken with oil, then place them in the air fryer basket.
  • Cook for 5 minutes on each side until light golden brown.
  • Top each chicken piece with the tomato sauce and shredded mozzarella. Sprinkle the remaining 1 tablespoon of Parmesan cheese over both pieces.
  • Cook for an additional 2 minutes or until the cheese is melted and bubbly. Ensure the internal temperature of the chicken reaches at least 165°F (74°C).
  • Serve hot and enjoy!

Notes

For extra flavor, consider adding fresh basil or a sprinkle of red pepper flakes on top before serving.
