  • 2 tbsp unsalted butter, melted
  • 2 large eggs, cooked and scrambled
  • 1 cup frozen mixed vegetables
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3 cups cooked and chilled rice
  • 2 tbsp low sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 bunch green onions for garnish (optional)

Instructions
 

  • Preheat your air fryer to 350°F (175°C).
  • In an oven-safe pan, combine the melted butter, cooked scrambled eggs, frozen mixed vegetables, diced onion, minced garlic, cooked rice, soy sauce, oyster sauce, and sesame oil. Mix well.
  • Place the pan in the preheated air fryer.
  • Cook for 10-15 minutes, stirring every 5 minutes to ensure even cooking.
  • Once the rice and vegetables are hot, remove from the air fryer.
  • Serve immediately, garnishing with green onions if desired.
