Ingredients
  

Main Ingredients

  • 0.5 cup soy sauce
  • 0.333 cup mirin
  • 0.333 cup sake No alcoholic drinks allowed, please substitute with a non-alcoholic option.
  • 2 tablespoons sugar
  • 0.5 inch ginger, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

Instructions
 

  • In a bowl, mix together the soy sauce, mirin, sake, sugar, ginger, and garlic. Set aside ¼ to ½ cup for later use.
  • Add the chicken cubes to the bowl with the teriyaki sauce. Cover and let it marinate in the refrigerator for at least 2 hours or overnight for best flavor.
  • Preheat your air fryer to 380°F (193°C).
  • In a small saucepan, combine reserved teriyaki sauce, cornstarch, and water. Stir until thickened to make the teriyaki glaze.
  • Spray the air fryer basket with non-stick cooking spray. Place marinated chicken in a single layer.
  • Air fry for 6 minutes, then flip and brush with teriyaki glaze. Cook for an additional 5-6 minutes, until internal temperature reaches 165°F (74°C).
  • Let cool slightly before serving.

Notes

For extra flavor, sprinkle sesame seeds and chopped green onions on the chicken before serving.
