  • 4 chicken breasts halved horizontally
  • 6 slices cooked bacon
  • 2 cups Monterey Jack cheese
  • 1/3 cup mayonnaise
  • 1 tablespoon honey
  • 2 teaspoons stone-ground mustard
  • Salt pepper, and paprika
  • Oil for cooking

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Season both sides of the chicken breasts with salt, pepper, and paprika.
  • In a skillet, brown the seasoned chicken breasts on both sides in a few tablespoons of oil over medium-high heat.
  • Transfer the browned chicken breasts to a 9x13 baking dish.
  • In a small bowl, mix the mayonnaise, honey, and stone-ground mustard to create the honey mustard sauce.
  • Spread the honey mustard sauce evenly over each chicken breast.
  • Top each chicken breast with Monterey Jack cheese and the cooked bacon slices.
  • Bake the assembled dish in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Serve the Alice Springs Chicken Casserole hot with additional honey mustard sauce on the side.

Notes

For mushroom lovers, sauté 1 cup of white button mushrooms in 1 tablespoon of oil separately, or use a small can of drained mushrooms as an additional topping. For extra tender chicken, create a quick meat tenderizer by marinating the chicken breasts in a mixture of 1 1/2 teaspoons of baking soda, 2 tablespoons of vinegar, and 1 teaspoon of salt. Cover the chicken with enough cold water and let it sit for 20 minutes before cooking.
