  • 2 cups apples, peeled, cored, and chopped (about 3 apples)
  • 1 teaspoon cinnamon
  • 1 tablespoon white sugar
  • 0.5 cup unsalted butter, softened
  • 0.67 cup granulated sugar
  • 2 eggs
  • 1.5 teaspoons vanilla extract
  • 1.5 cups flour
  • 0.5 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup buttermilk
  • 0.5 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 0.5 cup powdered sugar
  • 1 tablespoon milk

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease an 8 x 4 x 3-inch loaf pan with nonstick cooking spray.
  • In a bowl, toss the chopped apples with cinnamon and white sugar. Set aside.
  • Using an electric mixer, cream the softened butter with granulated sugar until fluffy. Add the eggs and vanilla extract, mixing until just combined.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt. Whisk together to ensure even distribution.
  • Gradually add the dry ingredients to the mixer and combine. Pour in the buttermilk and mix until smooth.
  • Spread half of the batter in the prepared loaf pan. Add half of the apple mixture on top, pressing them gently into the batter. Top with the remaining batter and then the rest of the apple mixture.
  • In a small bowl, mix the brown sugar and ground cinnamon together. Spread this streusel mixture on top of the bread.
  • Bake the apple bread for 70 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 15 minutes before carefully removing it.
  • Optional: Once the bread is cool, combine powdered sugar and milk to make a simple glaze. Drizzle the glaze over the loaf of bread.

Notes

For added texture, consider adding chopped nuts or oats to the streusel topping before baking.
