  • 1 tablespoon olive oil
  • 12 ounces beef sausage, sliced
  • 1 small onion, diced
  • 14.5 ounces canned petite diced tomatoes
  • 8 ounces chicken broth
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 10 ounces refrigerated cheese tortellini
  • 0.5 cup heavy cream
  • 0.5 cup sharp cheddar cheese, shredded

Instructions
 

  • In a sauté pan over medium heat, add the olive oil. Once hot, add the sliced beef sausage and diced onion. Cook for about 5 minutes, or until the sausage is browned on both sides.
  • Stir in the diced tomatoes, chicken broth, garlic powder, salt, pepper, and tortellini. Mix well and bring to a simmer. Cover the pan and reduce the heat to medium-low. Cook until the tortellini is al dente, following the package instructions for timing. Most of the liquid should be absorbed during this step. If there's excess liquid, drain all but ¼ cup and return to the stovetop.
  • Remove the lid and add the heavy cream. Stir and cook for about 1 minute, or until warmed through.
  • Take the pan off the heat and add the shredded cheddar cheese. Stir until melted and allow the dish to rest for 5 minutes. The sauce will continue to thicken as it stands.

Notes

For a little extra flavor, consider adding some fresh herbs like basil or parsley before serving. You can also add vegetables like spinach or bell peppers for added nutrition.
