In a bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
In a separate bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition.
Pour half of the cream cheese mixture over the crust.
In another bowl, mix the apple butter, cinnamon, and nutmeg. Spread this apple butter mixture over the cream cheese layer.
Pour the remaining cream cheese mixture over the apple butter layer.
Bake in the preheated oven for 55-60 minutes or until the center is almost set.
Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.
Notes
For a decorative touch, swirl additional apple butter on top before baking.
