  • 1.5 cups all-purpose flour
  • 1.5 cups rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 each Granny Smith apple, peeled and finely chopped
  • 1 tbsp fresh lemon juice

Instructions
 

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a bowl, whisk together the flour, oats, cinnamon, baking soda, and salt. Set aside.
  • In the bowl of a stand mixer, cream together the softened butter and brown sugar until it's light and fluffy.
  • Add in the egg and vanilla extract, mixing well until fully combined.
  • In a small bowl, toss the chopped apple with lemon juice to prevent browning and enhance its flavor.
  • Gently combine the flour mixture with the wet ingredients, then fold in the apples with a spatula.
  • Using a scoop, place the dough onto the prepared baking sheets, flattening each scoop slightly to help them bake evenly.
  • Bake one sheet at a time for 14-15 minutes, or until the cookies are set and lightly golden.
  • Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Store the cookies in an airtight container to maintain their freshness.

Notes

For added texture, consider adding chopped nuts or raisins to the cookie dough.
