  • 0.5 cup salted butter, at room temperature
  • 1 cup sugar
  • 1 egg egg
  • 1 cup all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 1 cup chopped apple pieces
  • 0.5 cup toasted pecan pieces

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a small pan, toast the pecan pieces until fragrant, about 5 minutes. Set aside to cool.
  • Peel, core, and chop the apples into small chunks, about 1/2 inch in size.
  • In a mixing bowl, cream together the butter and sugar until fluffy, about 3-4 minutes.
  • Add the egg and mix until fully incorporated.
  • Add the flour, baking powder, salt, and cinnamon. Mix until just combined.
  • Fold in the chopped apples and toasted pecans until well mixed. The batter will be sticky.
  • Pour the batter into a buttered 8x8 baking dish or one lined with parchment paper. Spread evenly.
  • Bake for 30-45 minutes, or until the top is golden brown. Start checking at 30 minutes.
  • Once baked, let cool in the pan for about 15 minutes before slicing into squares.
  • Cut into squares and serve, optionally with a scoop of ice cream!

Notes

You can enhance the flavor by adding a sprinkle of powdered sugar on top before serving. Experiment with different nuts like walnuts or almonds for a unique twist.
