**For the Dip:**

  • 5 medium apples peeled, cored, and chopped into ¼-inch cubes
  • 1/3 cup brown sugar packed
  • 2 tablespoons granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 1 cup water
  • 2 tablespoons cornstarch

**For the Chips:**

  • 8 flour tortillas 6-inch
  • 1/3 cup granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • Non-stick cooking spray

Instructions
 

  • In a medium mixing bowl, combine the diced apples, brown sugar, granulated sugar, ground cinnamon, and lemon juice. Stir until well mixed.
  • Transfer the apple mixture to a saucepan or large skillet. Add 1 cup of water and bring to a boil. Once boiling, cover the pan with a lid and reduce the heat to medium-low. Let it simmer for about 10 minutes, or until the apples are tender. Stir occasionally to prevent sticking.
  • Remove ½ cup of the cooking liquid from the pan and whisk in the cornstarch until smooth. Pour this cornstarch mixture back into the pan with the apples. Stir well and continue cooking until the dip thickens to your desired consistency. Remove from heat and serve warm or chilled.
  • Preheat your oven to 350°F (175°C). In a small bowl, whisk together the granulated sugar and ground cinnamon.
  • Spray both sides of each tortilla with non-stick cooking spray. Sprinkle the cinnamon sugar mixture generously on both sides of the tortillas.
  • Cut each tortilla into 8 wedges and arrange them in a single layer on a baking sheet. If necessary, bake in two batches. Bake for 9-12 minutes, or until the chips are golden brown and crisp. Keep an eye on them as they can burn quickly.
  • Allow the chips to cool on wire racks. Serve at room temperature alongside the apple dip.

Notes

For a fun twist, try adding a pinch of nutmeg to the dip for extra flavor. You can also use whole wheat tortillas for a healthier option.
