  • 2 pounds boneless skinless chicken thighs
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 cup apricot preserves
  • 3 tablespoons soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • chopped fresh parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Season the chicken thighs with salt and pepper on both sides.
  • In a medium bowl, whisk together the apricot preserves, soy sauce, Dijon mustard, apple cider vinegar, minced garlic, grated ginger, and onion powder until well combined.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat.
  • Add the chicken thighs to the skillet, smooth side down, and brown them for about 3-4 minutes on each side.
  • Pour the apricot sauce over the browned chicken in the skillet, ensuring they are well coated.
  • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  • If desired, garnish with chopped fresh parsley before serving.

Notes

For a little extra kick, consider adding a pinch of red pepper flakes to the apricot sauce. Serve with steamed vegetables or rice for a complete meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
