  • 12 oz jar marinated artichokes, drained
  • 0.5 cup roasted red peppers, diced
  • 14 oz can garbanzo beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, thinly sliced or diced

Instructions
 

  • In a liquid measuring cup or small bowl, whisk together the olive oil, red wine vinegar, maple syrup, garlic powder, fresh basil, and fresh oregano. Season with a generous pinch of salt and black pepper to taste. Set aside.
  • In a large bowl, add the drained marinated artichokes, diced roasted red peppers, rinsed garbanzo beans, halved cherry tomatoes, and sliced red onion. Gently mix the ingredients to avoid breaking the artichokes.
  • Drizzle the prepared vinaigrette over the salad ingredients. Toss gently until everything is well coated. Taste and adjust seasoning if needed.
  • This salad can be served immediately or chilled in the refrigerator for a bit to let the flavors meld together. Enjoy your refreshing Mediterranean salad! Pair it with grilled chicken or fish for a complete meal.
