Asian Citrus Salmon

A delicious and healthy salmon recipe with a zesty citrus marinade and shiitake mushrooms, cooked in an air fryer.

Ingredients

  • 1 each orange, juice & zest
  • 0.25 cup low sodium soy sauce
  • 3 tablespoons rice wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 tablespoon olive oil
  • 3 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 3 ounces shiitake mushrooms, whole
  • 2 5-ounce salmon fillets
  • 1 each scallions, thinly sliced, for garnish
  • 1 tablespoon sesame seeds, for garnish

Instructions
 

  • In a shallow bowl, mix together the orange juice and zest, soy sauce, rice wine vinegar, minced garlic, ginger paste, olive oil, honey, and red pepper flakes. Pour half of this mixture into a medium-sized mixing bowl.
  • Place the salmon fillets, skin side up, in the shallow bowl. Add the shiitake mushrooms to the medium bowl and spoon the marinade over them, ensuring they are well coated. Let both the salmon and mushrooms marinate for 30 minutes.
  • Preheat your air fryer to 400°F (200°C).
  • Once preheated, place the salmon fillets in the air fryer basket, skin side down, and arrange the marinated mushrooms around the salmon.
  • Cook for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • To serve, drizzle some of the remaining marinade from the mushroom bowl over the salmon and mushrooms. Garnish with sliced scallions and sesame seeds.

Notes

For added flavor, consider marinating the salmon and mushrooms for a longer period, up to 1 hour. You can substitute shiitake mushrooms with any other mushrooms you prefer, such as button or portobello. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
