  • 0.5 cup uncooked white rice
  • 1 each avocado, diced
  • 14 oz black beans, drained & rinsed
  • 12 oz corn, drained or fresh corn off the cob
  • 1 each red onion, chopped 1-2 tbsp
  • 2 tbsp fresh cilantro, chopped
  • salt & pepper to taste

Instructions
 

  • Cook the rice following the package instructions. Allow it to cool completely. This step is crucial for a refreshing salad.
  • In a small bowl, whisk together the dressing ingredients: olive oil, lime juice, lime zest, honey, chili powder, and garlic powder. This dressing adds a wonderful zing!
  • Prepare the remaining salad ingredients: dice the avocado, chop the red onion, and cilantro. Combine them with the cooled rice in a large salad bowl.
  • Pour the dressing over the salad and gently toss to coat all the ingredients evenly. Season with salt and pepper to taste. Consider adding more lime juice for extra zing!
  • Chill the salad for about an hour to let the flavors meld together. However, it can also be enjoyed immediately if you're in a hurry.

Notes

This salad can be a great side dish or a light meal on its own. Feel free to add grilled chicken or shrimp for a protein boost.
