Ingredients
  

  • 1 avocado mashed
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • 4 slices whole grain or sourdough bread
  • 4 slices of fresh mozzarella cheese
  • 1 roma tomato sliced
  • 1 tablespoon unsalted butter softened

Instructions
 

  • In a small bowl, mix the mashed avocado with lemon juice and salt. Set aside.
  • Butter one side of each bread slice and place them together with the buttered sides touching.
  • On the non-buttered side facing up, start layering the sandwich: 1 slice of cheese, 2 tomato slices, half of the mashed avocado, and another slice of cheese.
  • Repeat the layering process for the second sandwich.
  • Heat a sauté pan or panini maker over medium-low heat.
  • Place the layered bread in the heated pan or panini maker, then cover with the second buttered bread slice (buttered side up).
  • Once the bottom bread slice is slightly browned, flip the sandwich and continue grilling until both sides are golden brown, and the cheese is melted. If using a panini maker, flipping is not necessary.
  • Remove the sandwich from the pan and repeat the grilling process for the second sandwich.

Notes

Notes:
For an extra kick, add a slice of crispy bacon or a sprinkle of red pepper flakes to the sandwich before grilling.
