  • 4 slices Center Cut Bacon
  • 1 whole White Onion, finely diced
  • 1 whole Poblano or Bell Pepper, finely diced
  • 2 cloves Garlic, minced or grated
  • 1 pound Beef Breakfast Sausage
  • 1 packet Chili Seasoning
  • 28 oz Fire Roasted Crushed Tomatoes
  • 3 cups Beef Broth to desired consistency

Instructions
 

  • In a Dutch oven or large soup pot, add the bacon and cook over medium heat until fully crispy. This should take about 5-7 minutes. Once cooked, transfer the bacon to a paper towel to drain excess grease.
  • In the same pot with the remaining bacon grease, add the diced onion and pepper. Sauté for 2-3 minutes until softened. Then, add the minced garlic and cook for an additional 30-60 seconds until fragrant.
  • Add the beef sausage to the pot, breaking it apart with a spoon. Cook until the sausage is fully browned and cooked through, usually about 8-10 minutes.
  • Stir in the chili seasoning, crushed tomatoes, and enough beef broth to reach your desired consistency. Chop or crumble the cooked bacon and add it back into the pot.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 45-60 minutes, stirring occasionally, until the flavors meld together and the chili thickens to your desired consistency.

Notes

For a spicier kick, consider adding diced jalapeños or a dash of hot sauce. This chili pairs wonderfully with cornbread or over rice for a hearty meal.
