Ingredients
  

Main Ingredients

  • 2 12-ounce bags frozen cauliflower florets
  • 1 egg egg
  • 1 cup shredded cheddar cheese
  • 0.5 cup beef rind panko or regular panko if not keto
  • 0.25 cup cooked crumbled bacon
  • 2 tablespoons chopped green onions
  • 1 teaspoon seasoned salt

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Steam the frozen cauliflower florets according to the package instructions. Once steamed, let them cool until safe to handle.
  • Place the steamed cauliflower onto a clean dish towel and wring out as much water as possible. A drier cauliflower will yield crispier tots!
  • Transfer the dry cauliflower to a food processor and pulse until it’s broken into small pieces. If it still seems moist, return it to the towel and wring out more water.
  • In a mixing bowl, combine the dry cauliflower, egg, shredded cheddar cheese, beef rind panko, chopped green onions, crumbled bacon, and seasoned salt. Mix well until everything is evenly combined.
  • Using a tablespoon, scoop the mixture and form it into small tot shapes. Place the tots on a silicone-lined baking sheet. This recipe should yield about 36 tots.
  • Lightly spray the tops of the tots with cooking oil to help them crisp up in the oven. A light coating goes a long way!
  • Bake in the preheated oven for 20-25 minutes, or until the tots are lightly browned and crispy. Keep an eye on them to ensure they don’t overcook.

Notes

For a vegetarian option, you can omit the bacon. Feel free to add your favorite herbs or spices for extra flavor!
