  • 8 slices Bacon
  • 1 large Onion, diced
  • 2 large Carrots, peeled and sliced
  • 4 cups Chicken Broth
  • 1 to 2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 4 Dried Thyme
  • 1 2 Red Chili Flakes
  • 16 ounces Gnocchi
  • 2 cups Heavy Cream
  • 2 cups Cheddar Cheese

Instructions
 

  • Cook the bacon in a large skillet over medium heat until crispy. Once done, let it cool and chop it into small pieces. This adds a delightful crunch to your soup!
  • In a large pot over medium heat, melt some butter. Add the diced onions and sliced carrots, cooking until they are tender, which should take about 10-15 minutes. Stir occasionally to prevent sticking.
  • Pour in the chicken broth and bring it to a simmer. This is where the flavors start to meld together.
  • Once the vegetables are soft, reduce the heat to medium-low. Add the heavy cream and all the spices, allowing it to simmer gently until it slightly reduces. Remember, avoid boiling to prevent clumping when adding cheese!
  • Gradually add the grated cheddar cheese, stirring continuously until fully melted. The cheese will make your soup wonderfully creamy.
  • Mix in the gnocchi and cook for an additional 2 minutes. Adjust the seasoning with salt and pepper according to your taste.
  • Finally, stir in the crispy bacon pieces. Serve the soup hot, garnished with chopped green onions, extra cheese, and bacon bits for that extra touch!

Notes

For a vegetarian option, substitute bacon with vegetarian bacon bits or omit it altogether.
