Equipment

  • Baking sheet For baking the bombs.
  • Parchment paper To line the baking sheet.

Ingredients

Main Ingredients

  • 4 slices bacon sliced into ¼-inch thick pieces
  • 1 pound ground beef
  • 0.5 cup onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 2 dill pickles finely chopped
  • 16.3 ounces refrigerated biscuit dough 1 tube, like Pillsbury Grands Southern Homestyle Butter Tastin'
  • 1 cup freshly shredded cheddar cheese
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon sesame seeds optional, for topping

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large skillet over medium heat, cook the bacon until crispy. Use a slotted spoon to remove it, leaving the grease in the pan.
  • Add ground beef and chopped onion to the skillet. Cook for 7-10 minutes until beef is browned and onion is translucent. Drain excess grease.
  • Off the heat, stir in ketchup, Worcestershire sauce, chopped dill pickles, and cooked bacon.
  • Roll out each biscuit until ¼ inch thick. Divide beef filling and cheddar cheese among the biscuits. Pinch corners to form balls and place seam side down on prepared baking sheet.
  • Brush tops with melted butter and sprinkle with sesame seeds if desired. Bake for 20 minutes until golden brown.
  • Serve warm with ketchup and mustard for dipping.

Notes

You can prepare the filling and assemble the bombs a day in advance. They are also freezer-friendly! Prepare uncooked bombs and freeze for later baking.
