  • 2 large yellow onions
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • 1 teaspoon hot sauce
  • 1 cup Gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • 1 cup Parmesan cheese, shredded
  • 4 tablespoons reserved bacon drippings
  • fresh parsley for garnish

Instructions
 

  • Caramelize the onions by slicing them and cooking them in butter and olive oil until golden brown and sweet.
  • Cook the bacon until crispy, then set aside and reserve drippings.
  • Boil pasta shells in salted water until just al dente.
  • In the bacon drippings, create a roux with flour, then add cream and milk gradually.
  • Season the sauce with mustard powder, thyme, garlic powder, and hot sauce.
  • Incorporate the cheeses and mix in the caramelized onions and pasta.
  • Add chopped bacon and stir well before serving.
  • Garnish with parsley and serve hot.

Notes

For a little extra crunch, consider topping with breadcrumbs before baking for a crispy finish. Feel free to add vegetables like spinach or broccoli for added nutrition.
