Baked Crunchy Honey Lemon Chicken

  • 1 lb boneless chicken breast
  • 1 cup cornstarch
  • 2 tbsp water
  • 1 large egg whisked

Instructions
 

  • Preheat your oven to 375°F (190°C). Cut the chicken into bite-sized pieces.
  • In a small bowl, whisk the egg with water. In another bowl, place the cornstarch. Coat the chicken in the egg mixture, then roll it in the cornstarch. Place on a baking sheet lined with parchment paper.
  • Bake the chicken for about 15 minutes on the top half of the oven or until cooked through.
  • Prepare the sauce by combining all sauce ingredients except cornstarch and water. Bring to a low boil, stir to combine, then add cornstarch mixed with water.
  • Once chicken is cooked, move to the bottom third of the oven and turn to low broil. Cook for 5-10 minutes until light brown and crispy.
  • Add the cooked chicken to the saucepan and coat in the sauce. Serve immediately.

Notes

For a spicier kick, increase the amount of hot sauce or hot pepper flakes in the sauce.
