Main Ingredients

  • 1.25 pounds Russet Potatoes scrubbed clean and sliced into roughly ½ inch rounds
  • 1.5 tablespoons Olive Oil
  • 0.5 teaspoon Salt preferably kosher salt
  • 0.25 teaspoon Black Pepper
  • 1.5 cups Shredded Cheddar Cheese medium cheddar
  • 5 slices Bacon cooked crispy and crumbled

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Wash and slice the potatoes into ½ inch rounds, aiming for uniform sizes.
  • Line a baking sheet with parchment paper and place the potato slices closely without overlapping. Lightly brush them with olive oil.
  • Sprinkle half of the salt and pepper over the slices. Flip the rounds, brush the other side with oil, and season with the remaining salt and pepper.
  • Bake the potatoes in the oven for 15 minutes. Flip each slice and continue baking for an extra 5-10 minutes until tender.
  • Take out the baking sheet and top each potato slice with a generous teaspoon of shredded cheese and ¼ teaspoon of crumbled bacon.
  • Return the baking sheet to the oven and bake for 3-5 minutes until the cheese melts.
  • Serve the Cheesy Bacon Potato Rounds as they are or add your favorite toppings.

Notes

For a twist, consider adding a dollop of sour cream or a sprinkle of chives on top before serving.
