Ingredients
  

  • 4 6 oz. skinless salmon fillets
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • 2 tbsp old style Dijon mustard
  • Salt and ground black pepper to taste
  • 1 tbsp fresh chopped parsley optional
  • Lemon slices for serving (optional)
  • 2 tbsp unsalted butter
  • 2/3 cup chicken stock
  • 1 x 5 oz. pack of Boursin Garlic & Herbs Cheese at room temperature
  • 1-2 tbsp freshly squeezed lemon juice

Instructions
 

  • Preheat your oven to 425°F (220°C) and lightly grease a baking dish.
  • Pat the salmon dry with a paper towel. In a small bowl, mix lemon juice, olive oil, garlic, and Dijon mustard.
  • Place the salmon fillets in the baking dish and rub them with the lemon juice mixture. Season with salt and pepper.
  • Bake the salmon for 10-12 minutes, or until cooked through.
  • While the salmon is baking, melt butter in a small pot over medium heat.
  • Pour the chicken stock into the pot and blend in the Boursin cheese until fully incorporated. Simmer until the sauce thickens.
  • Remove the sauce from heat and stir in the lemon juice.
  • Drizzle the Boursin cheese sauce over the cooked salmon in the baking dish, combining it with the natural pan juices.
  • Garnish with parsley and serve with lemon slices.
