Marinade

  • Marinade:
  • 1/3 cup Italian salad dressing
  • 3 tablespoons balsamic vinegar
  • tablespoons honey
  • 1/4 teaspoon crushed red pepper flakes adjust to taste
  • Main Ingredients:
  • 1 pound chicken breast tenderloins
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound fresh asparagus trimmed and cut in half
  • 1 cup grape tomatoes halved

Instructions
 

  • In a medium bowl, whisk together the Italian salad dressing, balsamic vinegar, honey, and crushed red pepper flakes. Set this flavorful mixture aside.
  • Heat the olive oil in a non-stick 12-inch skillet over medium-high heat. Season the chicken with salt and pepper, then add it to the skillet. Cook for 6 minutes on one side, then flip and cook for another 6 minutes or until the chicken is fully cooked. Add half of the balsamic mixture to the skillet, stirring to coat the chicken. Once done, remove the chicken from the skillet and cover it with foil to keep warm.
  • In the same skillet, add the asparagus and season with salt and pepper. Stir and cook for about 5 minutes or until the asparagus is crisp-tender.
  • Return the chicken to the skillet along with the halved grape tomatoes. Pour in the remaining marinade and gently stir. Cook for an additional 5 minutes or until everything is heated through. Serve immediately and enjoy this delicious meal!

Notes

For a little extra flavor, consider adding minced garlic to the asparagus while cooking. You can also serve this dish over rice or quinoa for a heartier meal.
