  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 1 tsp salt
  • 0.5 cup unsalted butter, softened
  • 2 ripe bananas peeled
  • 1 cup brown sugar
  • 0.25 cup granulated sugar
  • 2 tsp vanilla extract
  • 1.5 cups semi-sweet chocolate chips

Instructions
 

  • In a medium bowl, whisk together the flour, baking soda, corn starch, and salt. Set aside.
  • In a large bowl, cream together the softened butter, ripe bananas, and sugars until light and fluffy. Add vanilla extract.
  • Stir in the flour mixture until just combined, then gently fold in the chocolate chips.
  • Refrigerate the dough for 30 minutes.
  • Preheat the oven to 375°F. Line two cookie sheets with parchment paper or lightly spray with cooking spray.
  • Use a cookie scoop to place dough onto the prepared cookie sheets, spacing them about 2 inches apart.
  • Bake the cookies for 9-10 minutes, or until they start to turn light golden brown on top.
  • Allow the cookies to cool completely on the cookie sheets.

Notes

For extra flavor, consider adding chopped nuts or a sprinkle of sea salt on top of the cookies before baking.
