0.75lbthin spaghetti or angel hair pasta or gluten-free pasta
1.5lbmedium shrimp, peeled and deveined
1tbspcoconut oil
3clovesgarlic, minced
3tsppaprika
1tbspdried parsley
1to tastefreshly ground black pepper
Instructions
In a bowl, mix together all the sauce ingredients and set aside. You can warm this up if desired, but it will warm nicely when mixed with the hot pasta.
Cook the pasta in a large pot of boiling water according to package instructions. Drain well.
In a medium-sized bowl, combine the uncooked shrimp with paprika, 3 cloves of garlic, and black pepper.
Heat coconut oil in a pan over medium-high heat. Add the coated uncooked shrimp and cook, stirring constantly, until pink, about 6-8 minutes.
Remove the shrimp from heat and set aside if the pasta is not ready.
In a large serving bowl, toss together the cooked pasta, shrimp, and sauce mixture.
Garnish with parsley and serve immediately.
Notes
For an extra kick, sprinkle some additional crushed red pepper flakes on top before serving.
