Ingredients
  

  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce divided

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Peel and chop the sweet potatoes into 1/2-inch chunks. Cut the onion into 1-inch pieces. Place both the sweet potatoes and the onion on a lined sheet pan.
  • Drizzle olive oil over the sweet potatoes and onions. Sprinkle with half of the salt and garlic powder. Toss everything until well coated. Bake at 400°F (200°C) for 20 minutes.
  • After 20 minutes, push the sweet potatoes to one side of the pan. Add the broccoli to the other side, drizzle with a little olive oil, and sprinkle with the remaining salt.
  • Place the chicken breasts on the pan and brush them with 1/4 cup of BBQ sauce. Bake for an additional 15-20 minutes at 400°F (200°C) until the chicken is fully cooked.
  • Remove the pan from the oven and shred the chicken using two forks. Toss the shredded chicken with the remaining BBQ sauce.
  • Divide the chicken and vegetables into three bowls and serve immediately.

Notes

For added flavor, consider marinating the chicken in BBQ sauce for a few hours before cooking. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
