boneless, skinless chicken thighs

BBQ sauce
Instructions
Heat olive oil in a medium skillet over medium heat.
Add thinly sliced onions and cook for 3-4 minutes, stirring occasionally.
Season the chicken thighs with salt and pepper, then add them to the skillet.
Cover and cook on medium-low heat for 2-3 minutes.
Uncover and continue cooking until the chicken reaches an internal temperature of 165°F.
Shred the cooked chicken using two forks and stir in the BBQ sauce.
Sprinkle the shredded cheese on top of the chicken mixture and cover for 1-2 minutes.
Serve hot and garnish with cilantro or green onions if desired.
Notes
For added flavor, sprinkle some chopped fresh cilantro or green onions on top before serving.
