  • 1 package cornbread mix
  • 0.25 cup milk
  • 1 unit egg
  • 1 can chopped green chiles, drained
  • 1 cup shredded cheddar cheese
  • 0.5 pound lean ground beef
  • 0.5 unit green pepper, chopped
  • 0.5 unit yellow onion, chopped
  • 1 can black beans, drained
  • 1 cup Pace® Picante Sauce
  • 1 optional Pace® Chunky Salsa, sour cream, chopped cilantro

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the cornbread mix, milk, egg, and 1/2 cup of the shredded cheddar cheese. Stir in the drained chopped green chiles for added flavor.
  • Pour the cornbread mixture into a greased pie plate and bake for 6 minutes. It will not be fully cooked at this stage, but this is essential for the perfect texture.
  • While the cornbread is baking, heat a large skillet over medium heat. Add the ground beef, chopped onions, and green pepper. Cook until the beef is no longer pink, stirring occasionally. This should take about 5-7 minutes.
  • Stir in the drained black beans and Pace® Picante Sauce. Mix well and let it cook for a couple of minutes to meld the flavors together.
  • Remove the partially baked cornbread from the oven. Pour the beef and bean mixture over the cornbread, then sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  • Return the casserole to the oven and bake for an additional 15-18 minutes, or until the cheese is melted and the crust is golden brown. Keep an eye on it to prevent over-browning.
  • Once baked, let the casserole rest for at least 5 minutes before slicing. This helps keep the slices neat and prevents the mixture from becoming runny.
  • Serve with optional toppings like Pace® Chunky Salsa, sour cream, or chopped cilantro if desired for extra flavor.

Notes

For a spicier kick, consider using hot Pace® Picante Sauce. You can add other vegetables like corn or diced tomatoes for extra flavor and nutrition. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
