  • 1 lb ground beef (90/10)
  • 6 eggs eggs
  • 1 green pepper green pepper, diced
  • 1 red pepper red pepper, diced
  • 0.5 cup white onion, diced
  • 2 tbsp avocado oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp minced garlic
  • salt and pepper to taste
  • garnish: avocado, cilantro, olives

Instructions
 

  • Heat avocado oil in a medium skillet over medium heat.
  • Add diced onion, garlic, and peppers to the skillet. Sauté until peppers start to soften, around 5 minutes.
  • Add ground beef, cumin, chili powder, paprika, minced garlic, salt, and pepper to the skillet. Cook until the beef is no longer pink, breaking it into crumbles as it cooks.
  • In a small bowl, crack the eggs, season with salt and pepper, and scramble with a fork.
  • Once the peppers are tender and the beef is cooked, create a well in the middle of the skillet and pour in the scrambled eggs.
  • Gently mix everything together in the skillet as the eggs begin to set.
  • Cook until the eggs are fully set.
  • Divide the skillet contents into 4 containers and top with cilantro, avocado, and olives.

Notes

Feel free to customize the garnishes with your favorite toppings like salsa or shredded cheese. This breakfast skillet can be stored in the refrigerator for a few days, making it a convenient meal prep option.
