Ingredients

  • 1 lb ground beef
  • 0.5 cup water
  • 10 oz red enchilada sauce
  • 15 oz black beans, rinsed and drained
  • 1 oz taco seasoning
  • 4 count flour tortillas, cut into 1-inch strips
  • 1.5 cup shredded Mexican cheese blend
  • 0.25 cup green onions, sliced
  • 0.5 cup sour cream for serving

Instructions
 

  • In a large skillet over medium heat, cook the ground beef until it is no longer pink, about 5-7 minutes.
  • Add the water, enchilada sauce, black beans, and taco seasoning to the skillet. Stir well and cook for 3-5 minutes, or until the sauce thickens slightly.
  • Stir in 1/2 cup of the shredded cheese until it melts into the mixture. Then, add the tortilla strips and mix until they are well coated.
  • Sprinkle the remaining cheese on top of the mixture. Cover the skillet and remove it from the heat. Let it sit for about 5 minutes.
  • Serve the dish topped with sour cream and sliced green onions.

Notes

For a spicier kick, consider adding diced jalapeños or a dash of hot sauce. You can substitute the black beans with pinto beans if you prefer.
