  • 16 oz tortellini
  • 1 lb ground beef
  • 1 Tbsp taco seasoning
  • 1 cup beef broth
  • 2 cups enchilada sauce
  • 15 oz black beans, drained & rinsed
  • 12 oz frozen corn
  • 1 cup cheddar cheese, shredded
  • 1 serving sour cream for garnish
  • 1 serving fresh cilantro leaves for garnish

Instructions
 

  • Cook the tortellini according to the package instructions until al dente, about 3-5 minutes. Salt the water for added flavor.
  • In a large skillet, brown the ground beef for about 5-7 minutes. Drain any excess grease once fully cooked.
  • Sprinkle taco seasoning over the beef and stir. Add the beef broth and enchilada sauce, mixing well and simmering for 3-4 minutes.
  • Stir in the black beans, corn, and cooked tortellini, simmering for an additional 1-2 minutes until heated through.
  • Sprinkle shredded cheddar cheese over the top, cover for a few minutes to allow the cheese to melt.
  • Serve topped with sour cream and fresh cilantro leaves.

Feel free to customize this dish with your favorite toppings like avocado, jalapeños, or a squeeze of lime juice.
