Instructions
Cook the tortellini according to the package instructions until al dente, about 3-5 minutes. Salt the water for added flavor.
In a large skillet, brown the ground beef for about 5-7 minutes. Drain any excess grease once fully cooked.
Sprinkle taco seasoning over the beef and stir. Add the beef broth and enchilada sauce, mixing well and simmering for 3-4 minutes.
Stir in the black beans, corn, and cooked tortellini, simmering for an additional 1-2 minutes until heated through.
Sprinkle shredded cheddar cheese over the top, cover for a few minutes to allow the cheese to melt.
Serve topped with sour cream and fresh cilantro leaves.
