  • 2 pounds cubed beef stew meat or sirloin tips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 0.5 medium yellow onion, diced
  • to taste salt and pepper
  • 2 cups beef broth
  • 1 tablespoon ghee or dairy-free butter
  • 1 teaspoon coconut aminos or Worcestershire sauce
  • 2 tablespoons tapioca flour or cornstarch
  • 2 tablespoons cold water
  • 2 12 ounce bags cauliflower rice
  • 1 tablespoon ghee or dairy-free butter
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 tablespoon chives (fresh or dry)
  • 2 tablespoons coconut milk
  • 2 tablespoons dairy-free sour cream or regular sour cream
  • to taste salt and pepper

Instructions
 

  • Season the beef tips with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the beef tips and sear them on all sides until browned, about 5-7 minutes.
  • Move the beef tips to one side of the skillet. On the other side, add the diced onion and minced garlic. Sauté until the onions are translucent and the garlic is fragrant, about 30-40 seconds.
  • Add the ghee and beef broth to the skillet along with the tapioca flour or cornstarch slurry. Stir constantly to avoid lumps. If using for Keto, sprinkle in 1/2 tsp xanthan gum and whisk until it thickens. Optionally, add a splash of Worcestershire sauce or coconut aminos for extra flavor.
  • Bring the mixture to a simmer, then reduce the heat to low. Let it simmer uncovered for about 30 minutes, or until the beef is tender and the gravy has thickened to your liking. Taste and adjust seasoning with salt and pepper as needed.
  • If using frozen cauliflower rice, cook according to the package instructions and drain any excess water. If using fresh cauliflower, steam the florets in a steamer basket over boiling water until fork-tender, about 10-15 minutes. Drain and pat dry to prevent watery mash.
  • In a food processor, combine the cooked cauliflower, garlic powder, onion powder, chives, ghee, coconut milk, dairy-free sour cream, and salt/pepper. Blend until smooth. If the mash is too thick, add more coconut milk, one tablespoon at a time, until you reach the desired consistency.
  • Once the beef is tender and the gravy is thickened, serve the beef tips and gravy over the cauliflower mash. Garnish with fresh herbs like parsley or additional chives.

Notes

For a creamier mash, feel free to add more dairy-free sour cream or regular sour cream. You can also add other herbs or spices to the cauliflower mash for extra flavor.
