Ingredients
  

  • 2 lbs. lean ground beef
  • 1 cup Italian breadcrumbs
  • 2 eggs
  • ½ cup onion diced
  • 2 tsp garlic powder
  • 2 tsp chopped parsley
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup bbq sauce

For the Topping:

  • cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp yellow mustard

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with foil and spray it with non-stick spray. Set it aside.
  • In a large bowl, mix the ground beef, breadcrumbs, eggs, diced onion, garlic powder, parsley, salt, pepper, and bbq sauce. Use your hands to combine everything thoroughly.
  • Shape the meat mixture into an 8” x 4” loaf on the prepared baking sheet.
  • Bake for 45 minutes. Then, take it out of the oven and increase the temperature to 400°F (200°C).
  • In a small bowl, whisk together the ketchup, brown sugar, and yellow mustard. Spread this topping over the meatloaf.
  • Put the meatloaf back in the oven and bake for an additional 10 to 15 minutes, or until the internal temperature reaches 160°F (71°C) in the center.
  • Allow the meatloaf to rest for 5 to 10 minutes before slicing. Enjoy your delicious meatloaf!

Notes:
For a twist, you can add a layer of bacon on top of the meatloaf before baking for extra flavor and texture.
