Instructions
In a small pot, combine the mayo, ketchup, gherkins, yellow mustard, vinegar, sugar, and garlic powder to make the sauce. Set aside.
In a large heavy-based pan over medium heat, melt 1 tbsp of butter. Add the thinly sliced onions and cook until they are soft and golden, about 8-10 minutes. Season with salt and pepper, and continue to cook for another 15 minutes until the onions are deep golden and sticky. If the onions start to dry out, add a splash of water.
Once the onions are done, remove them from the pan and increase the heat to medium-high. Butter one side of each slice of bread and place them butter-side-down in the pan. Toast the bread until crisp and golden. Flip the slices over, placing Swiss cheese on half and American cheese on the other half. Turn off the heat.
Divide the ground beef into two equal portions, shaping them to fit the bread slices. Make them slightly larger than the bread, as they will shrink while cooking. Season the tops with salt and pepper.
Melt 1 tbsp of butter in the pan over medium-high heat. Add the shaped beef patties, seasoned-side down. Season the tops again and cook for a couple of minutes until a crust forms. Flip and cook until they are done to your preference (about 3-4 minutes for medium). Remove from the pan.
Spread the sauce on all the toasted bread slices. Stack two slices with one cooked patty and some caramelized onions. Top with the remaining slices to create two full sandwiches.
Toast the assembled sandwiches in the pan over medium heat until they are golden, crisp, and the cheese is melted. You can use the leftover fat or add more butter for toasting.
Once done, slice the sandwiches in half, serve immediately, and enjoy your perfect patty melt!
Notes
For a twist, add caramelized mushrooms or bacon to the patty melt.
