Ingredients
  

Marinade Ingredients

  • 0.5 cup freshly squeezed orange juice
  • 0.25 cup freshly squeezed lime juice
  • 0.25 cup grapeseed oil
  • 2 teaspoons salt
  • 3 cloves garlic
  • 2 teaspoons Mexican oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 2 ounces achiote powder
  • 2 teaspoons onion powder

Chicken Ingredients

  • 3 pounds boneless, skinless chicken thighs
  • 3 tablespoons vegetable oil

Instructions
 

  • In a blender or food processor, combine all the marinade ingredients and blend until smooth.
  • Place the chicken in a large bowl and pour the marinade over it. Cover the bowl with plastic wrap and marinate for at least 2 hours, or overnight for best flavor.
  • Heat a grill pan over medium-high heat and add the vegetable oil. If using an outdoor grill, preheat it to 350°F (175°C).
  • Cook the chicken thighs in batches for 3 to 5 minutes per side, adjusting based on thickness. If using an outdoor grill, grill the chicken covered for 20 to 30 minutes, flipping halfway. Ensure the chicken reaches an internal temperature of 165°F to 175°F (74°C to 79°C) for doneness.

Notes

For added flavor, you can reserve some marinade before adding it to the chicken and use it as a sauce after cooking. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
