  • 2 breasts boneless skinless chicken
  • 0.25 cup chopped green onion
  • 0.5 cup quartered cherry tomatoes
  • 0.5 cup mayonnaise
  • 0.5 teaspoon black pepper
  • 5 strips cooked bacon, chopped

Instructions
 

  • Place the chicken breasts in a medium-sized saucepan and cover them with cold water, ensuring there is at least 1 inch of water above the chicken.
  • Set the pot on the stove uncovered and bring the water to a boil.
  • Once boiling, reduce the heat to a simmer and cover the pot with a lid. Let the chicken simmer for 14 minutes, then remove from heat.
  • While the chicken is cooking, prepare the bacon. In a skillet over medium-low heat, fry the bacon until crispy. This should take about 5-7 minutes.
  • Once cooked, place the bacon on a paper towel to drain excess grease, then chop it into bite-sized pieces.
  • In a small bowl, mix together the mayonnaise, chopped green onion, and black pepper.
  • After the chicken has finished cooking, remove it from the water and shred it using two forks.
  • In a large bowl, combine the shredded chicken, mayonnaise mixture, quartered cherry tomatoes, and chopped bacon. Mix everything until well combined.
  • Enjoy your BLT Chicken Salad immediately, or store it in an airtight container in the refrigerator for up to 4 days.

Notes

For added flavor, consider mixing in some diced avocado or a squeeze of lemon juice. This salad is great on its own or served on a bed of greens.
