Instructions
Boil a large pot of salted water and cook the macaroni until al dente, about 8 minutes. Drain and transfer to a large mixing bowl.
Fry the beef bacon in a skillet over medium heat until crispy, about 6-8 minutes. Crumble into bite-sized pieces and set aside.
In a small mixing bowl, combine the diced tomatoes and chopped green onions. Add the mayonnaise, white vinegar, salt, and pepper. Mix well.
Pour the mayonnaise mixture over the macaroni and stir thoroughly. Chill for at least 2 hours.
Just before serving, mix in the crumbled bacon and top with extra green onions for garnish.
Notes
For added flavor, consider adding diced bell peppers or a sprinkle of paprika.
