BLT Macaroni Salad

Ingredients

  • 1 lb macaroni
  • 8 slices beef bacon
  • 2 medium tomatoes diced
  • 4 stalks green onions chopped
  • 1 cup mayonnaise
  • 0.25 cup white vinegar
  • 1 to taste salt
  • 1 to taste pepper

Instructions
 

  • Boil a large pot of salted water and cook the macaroni until al dente, about 8 minutes. Drain and transfer to a large mixing bowl.
  • Fry the beef bacon in a skillet over medium heat until crispy, about 6-8 minutes. Crumble into bite-sized pieces and set aside.
  • In a small mixing bowl, combine the diced tomatoes and chopped green onions. Add the mayonnaise, white vinegar, salt, and pepper. Mix well.
  • Pour the mayonnaise mixture over the macaroni and stir thoroughly. Chill for at least 2 hours.
  • Just before serving, mix in the crumbled bacon and top with extra green onions for garnish.

Notes

For added flavor, consider adding diced bell peppers or a sprinkle of paprika.
