  • 2.5 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1.75 cups buttermilk (up to 2 cups)
  • 1.5 cups fresh blueberries
  • 0.5 cup salted butter, melted (1 stick)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • 0.5 teaspoon vanilla extract (for glaze)

Instructions
 

  • Preheat your oven to 450°F (230°C).
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • Gradually pour in the buttermilk while gently stirring until a sticky dough forms. If the dough appears dry, add a little more buttermilk, but be careful not to overmix.
  • Gently fold in the blueberries, ensuring they are evenly distributed throughout the dough without crushing them.
  • Pour the melted butter into the bottom of a 9×9-inch baking pan.
  • Spread the dough evenly into the baking dish over the melted butter, smoothing it out with a spatula. Cut the dough into 9 squares using a knife.
  • Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown.
  • While the biscuits are baking, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Add the vanilla extract.
  • Once the biscuits are done baking, let them cool slightly before drizzling the glaze over the top. Serve warm and enjoy!

Notes

These biscuits are best enjoyed fresh but can be stored in an airtight container for a couple of days. For a fun twist, try adding a sprinkle of lemon zest to the glaze for extra flavor.
