  • 2.5 cup peeled and sliced peaches about 5-6 peaches
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 0.25 teaspoon vanilla extract
  • 0.5 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 0.5 cup all-purpose flour for crumble topping
  • 0.5 cup old-fashioned oats
  • 0.33 cup brown sugar
  • 0.25 cup granulated sugar for crumble topping
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter diced

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures an even bake for your crumble.
  • In a large bowl, combine the blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar, and 1/4 cup of flour. Gently toss until the fruit is well coated. Let this mixture sit while you prepare the crumble topping; this allows the flavors to meld.
  • For the crumble topping, in another large bowl, mix together 1/2 cup of flour, oats, brown sugar, 1/4 cup of granulated sugar, salt, and cinnamon. Stir with a whisk until well combined to avoid clumps.
  • Add the diced cold butter to the dry mixture. Use your fingers to mix it in until the mixture forms large crumbles. This step is crucial for a crispy topping.
  • Pour the fruit mixture into a 2-quart ceramic or glass baking dish, or a large cast iron skillet. Evenly sprinkle the crumble topping over the fruit for that perfect golden crust.
  • Place the baking dish on a large baking sheet to catch any drips. Bake for 40 to 45 minutes, or until the topping is golden brown and crisp, and the juices are bubbly. Keep an eye on it to prevent burning.
  • Serve warm or at room temperature. This crumble is delightful with a scoop of vanilla ice cream on top for that extra indulgence!

Notes

For a twist, try adding a pinch of nutmeg to the crumble topping. You can substitute other fruits like apples or cherries for a different flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
