  • 4 count Boneless, skinless chicken breasts Ensure even thickness for even cooking
  • 5.2 oz Boursin cheese Or substitute with cream cheese or herbed goat cheese
  • 1 cup Panko breadcrumbs Regular breadcrumbs can be used, but texture may change
  • 0.25 cup Grated Parmesan cheese
  • 2 tbsp Chopped fresh parsley Or 1 teaspoon dried parsley
  • 1 tbsp Chopped fresh thyme Or 1 teaspoon dried thyme
  • 1 tbsp Chopped fresh rosemary Or 1 teaspoon dried rosemary
  • 1 tbsp Olive oil
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 2 tbsp Melted butter

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a baking dish to prevent sticking.
  • In a mixing bowl, combine the Panko breadcrumbs, grated Parmesan cheese, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper to create the coating mixture. This step is crucial for adding flavor, so don’t skip it!
  • Take each chicken breast and carefully create a pocket by slicing into the side. Stuff each pocket with Boursin cheese. Be gentle to avoid tearing the chicken.
  • If desired, secure the openings of the chicken breasts with toothpicks to keep the cheese inside. This will help maintain the stuffing during cooking.
  • Brush the outside of each stuffed chicken breast with olive oil, then coat them thoroughly in the breadcrumb mixture. This will create a beautiful golden crust.
  • Place the coated chicken breasts in the greased baking dish and drizzle melted butter over the top for extra flavor.
  • Bake in the preheated oven for 30-35 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer for accuracy to ensure the chicken is fully cooked.
  • Once cooked, let the chicken rest for a few minutes before serving. Remove any toothpicks if used to avoid any surprises while dining!
