Ingredients

  • 1 lb beef brats
  • 1 lb mushrooms, quartered
  • 1 lb potatoes, diced
  • 1 count red bell pepper, diced
  • 4 count green onions, chopped
  • 1 tsp salt to taste
  • 1 tbsp oil for cooking
  • 1 cup shredded cheese mozzarella or Mexican blend

Instructions
 

  • In a large skillet over medium heat, add the beef brats and sauté them on all sides until they are golden brown. This should take about 5-7 minutes. Once cooked, set them aside to cool.
  • In the same skillet, add the quartered mushrooms and sauté until they are golden brown, which should take another 5 minutes. Remove from heat and transfer them to a large bowl.
  • Dice the potatoes into small pieces. In the skillet, add a little oil and brown the diced potatoes for about 10 minutes, stirring occasionally. Season with salt to taste, then add them to the bowl with the mushrooms.
  • Cut the cooked brats into rings and return them to the skillet. Cook until the sides begin to brown, about 3-5 minutes. Then, add them to the bowl with the potatoes and mushrooms.
  • Dice the red bell pepper and chop the green onions. Stir them into the bowl with the sausage and veggies. Feel free to season with additional salt and pepper if desired.
  • Mix in the shredded cheese, then transfer all the ingredients into a baking dish. Cover the dish with a lid or aluminum foil.
  • Bake in a preheated oven at 350°F (175°C) for about 15 minutes. This helps all the flavors meld together.
  • Remove the lid and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Serve immediately and enjoy!

Notes

Feel free to add other vegetables like zucchini or spinach for extra flavor and nutrition. This dish can be made ahead of time and stored in the refrigerator before baking.
