Ingredients
  

  • 1 12- inch prebaked pizza shell or 2 prepared naan breads or pita breads
  • 2 tablespoons butter
  • 5 large eggs
  • 1/4 cup heavy cream or milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarsely ground black pepper
  • 2 cups Monterey Jack cheddar, or mozzarella cheese, divided
  • 3 cups sausage gravy divided

Instructions
 

  • Preheat your oven to 350ºF (175ºC) with a rack in the center position.
  • In a liquid measuring cup or mixing bowl, whisk together the eggs, cream, salt, and pepper until well combined. Set aside.
  • Heat the butter in a large non-stick skillet over medium-low heat. This is important to ensure the eggs cook evenly.
  • Pour the egg mixture into the skillet and let it cook undisturbed for 1 minute. Gently stir the eggs in a circular motion with a silicone spatula, scraping the bottom and sides of the pan. Cook until the eggs form a fluffy curd, for about 2-3 minutes. The eggs should be moist and soft set, not runny. This is the key to a perfect scramble!
  • Sprinkle 1 cup of cheese over the eggs, gently stir to combine, and remove the skillet from the heat. Spread the eggs onto your choice of pizza shell, naan, or pita bread, leaving a 1-inch crust around the edge.
  • Spoon 1 1/2 cups of sausage gravy over and around the eggs, adding rich flavor. Sprinkle the remaining cheese over the exposed egg for extra cheesiness.
  • Place the pizza in the oven on a sheet pan lined with parchment paper or directly on the rack. Bake until the cheese is melted and the sausage gravy is bubbly, about 15-20 minutes.
  • For a golden brown finish, broil the pizza for a couple of minutes, watching carefully to prevent burning.
  • Remove the pizza from the oven and immediately garnish with chopped chives or green onions. Let it rest for 3 to 5 minutes before slicing. Serve with the remaining sausage gravy for dipping.
