  • 1 tablespoon olive oil
  • 1 each onion, diced
  • 2 each green bell peppers, diced
  • 1 each red bell pepper, diced
  • 8.3 ounces breakfast sausage links, sliced
  • 0.75 teaspoon Slap Ya Mama seasoning
  • 1.5 cups pinto beans, drained
  • 10 large eggs
  • 0.5 teaspoon pepper
  • 0.25 teaspoon salt
  • 1 tablespoon milk
  • 3 slices pepper jack cheese

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers. Stir frequently for about 5-7 minutes, or until the vegetables are tender.
  • Add the sliced sausage and Slap Ya Mama seasoning to the skillet. Cook for about 5-7 minutes, or until the sausage is browned on both sides.
  • In a separate non-stick pan, spray with cooking spray. In a bowl, whisk together the eggs, milk, salt, and pepper. Cook over medium heat for about 5 minutes, stirring gently until the eggs are fluffy.
  • Stir in the pepper jack cheese to the eggs and cook for an additional minute, or until the cheese is melted.
  • Add the cooked eggs and drained pinto beans to the sausage and vegetable mixture in the skillet. Stir until everything is fully combined and heated through.
  • Enjoy your hearty breakfast skillet immediately while it's warm!
