  • 1 head broccoli, chopped
  • 0.5 large yellow onion, diced
  • 5 slices turkey bacon, chopped
  • 8 large eggs
  • 0.5 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 1 pinch pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Cook the turkey bacon according to the package instructions. Once cooked, chop it into small pieces.
  • In the same pan used for the bacon, add olive oil and sauté the diced onion and chopped broccoli with salt and pepper for 5-10 minutes until they soften.
  • In a bowl, whisk the eggs, then add cheddar cheese, garlic powder, 1/4 tsp salt, and pepper. Mix thoroughly.
  • Remove the sautéed veggies from the heat and transfer them to a greased baking dish. Add the chopped turkey bacon, spreading everything evenly.
  • Pour the egg mixture over the veggies and bacon, ensuring an even distribution.
  • Optionally, sprinkle some extra cheese on top.
  • Bake in the preheated oven for 20 minutes or until the eggs are fully set.
  • Allow the bake to cool slightly, then cut into squares and serve. Enjoy!

Notes

For added flavor, consider adding diced bell peppers or mushrooms to the bake.
