  • 3 cup lightly steamed and chopped broccoli
  • 1 ounce cream cheese, softened
  • 1.5 cup cheddar cheese
  • 0.5 cup parmesan cheese
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 eggs beaten
  • 2 tablespoon coconut flour
  • 1 teaspoon baking powder

Instructions
 

  • Preheat your oven to 400°F (200°C). This will ensure your bites cook evenly.
  • Steam the broccoli until tender, then chop it lightly. Make sure to remove any tough stems for a better texture.
  • In a medium bowl, mix the softened cream cheese, cheddar cheese, parmesan cheese, garlic powder, salt, pepper, and beaten eggs. Stir until well combined.
  • Gently fold in the coconut flour and baking powder to keep the mixture light and airy.
  • Chill the dough for 10-15 minutes. This step helps the coconut flour absorb moisture, making the bites hold together better when baked.
  • Spoon the mixture into a silicone mini muffin pan. If you don't have a silicone pan, greasing a regular muffin tin will work as well.
  • Bake for 12-15 minutes until the bites turn golden brown. Keep an eye on them to avoid over-baking!

Notes

For added flavor, consider mixing in cooked and crumbled beef bacon or diced beef sausage.
