  • 2 tsp vegetable oil

  • 1 tsp pepper
  • 1 pieces red bell pepper, cut into 1-inch pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 tbsp minced garlic
  • 0.5 tsp ground ginger
  • 0.5 cup pineapple juice
  • 0.33 cup soy sauce
  • 0.33 cup chicken broth
  • 0.25 cup hoisin sauce
  • 0.25 cup brown sugar
  • 2 tsp cornstarch
  • 1 tbsp sesame seeds
  • 2 pieces green onions, sliced

Instructions
 

  • Heat the vegetable oil in a large skillet over medium heat. Once hot, add the chicken pieces, seasoning them with salt and pepper. Tip: Ensure the oil is hot enough to avoid the chicken from sticking to the pan.
  • Cook the chicken for 4-6 minutes, stirring occasionally, until it is cooked through and no longer pink. Tip: Check the internal temperature of the chicken; it should reach 165°F for safety.
  • Add the red bell pepper and pineapple chunks to the skillet. Cook for an additional 3-5 minutes, or until the bell pepper is tender. Tip: The bell pepper adds a nice crunch and color to the dish.
  • In a small bowl, whisk together the pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger, and cornstarch until well combined. Tip: Make sure the cornstarch is fully dissolved to avoid lumps in your sauce.
  • Pour the sauce mixture into the skillet with the chicken and vegetables. Bring to a low simmer and cook for 1-2 minutes, or until the sauce has thickened to your liking. Tip: Stir constantly to ensure even cooking and prevent burning.
