Main Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 tbsp olive oil
  • 1 can corn, rinsed and drained
  • 2 tbsp mayo
  • 2 tbsp sour cream or plain Greek yogurt
  • 1 tsp chili powder
  • 1 4 paprika
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped cilantro
  • 1 4 cotija cheese, grated

Instructions
 

  • Toss Brussels sprouts with olive oil, salt, and pepper. Air fry at 380°F for 6 minutes, toss, then air fry an additional 4-7 minutes until crispy.
  • In a saucepan over medium heat, warm the rinsed and drained corn.
  • In a small bowl, mix mayo, sour cream, salt, lime juice, chili powder, and paprika.
  • Add the mayo mixture to the warm corn in the saucepan. Cook for 2 more minutes, stirring frequently.
  • Combine the corn mixture with the crispy Brussels sprouts in a bowl. Toss gently to coat the sprouts.
  • Top the salad with cotija cheese, cilantro, and lime wedges.
