  • 1 head cauliflower, cut into florets
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 0.5 cup buffalo sauce
  • 0.5 cup ranch dressing
  • 0.25 cup green onions, chopped
  • 1 teaspoon garlic powder
  • 2 cups rotisserie chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded gouda cheese
  • 1 tablespoon ranch dressing, for drizzling on top
  • 1 tablespoon green onions or chives, for garnish

Instructions
 

  • Preheat your oven to 450°F (230°C). Toss cauliflower florets with olive oil in a baking dish. Season with salt and pepper to taste.
  • Bake the cauliflower until tender, about 20 minutes. Keep an eye on it to avoid overcooking. Lower the oven temperature to 350°F (175°C) for the next steps.
  • In a medium bowl, mix cream cheese, buffalo sauce, ranch dressing, green onions, and garlic powder until well combined.
  • Combine the rotisserie chicken with the roasted cauliflower in the baking dish. Spread the cream cheese mixture on top evenly to ensure every bite is flavorful.
  • Sprinkle cheddar and gouda cheese over the top. Bake until the cheese is melted and bubbly, around 20 minutes.
  • Allow the casserole to cool for 10 minutes before serving. Drizzle with ranch dressing, garnish with green onions or chives, and serve.

Notes

For a spicier kick, increase the amount of buffalo sauce. You can also add a sprinkle of blue cheese crumbles for extra flavor.
